A Brief History
The Bee's Knees cocktail dates back to the Prohibition era in the United States. During this time, the quality of gin was often questionable, leading bartenders to mix it with honey and lemon to mask undesirable flavors. The term "bee's knees" was a popular slang expression in the 1920s, meaning "the best." Thus, the cocktail was aptly named the Bee's Knees, signifying its excellence.

Lavender Honey Syrup Ingredients
120ml honey
120ml water
1 tbsp dried lavender flowers
Cocktail Ingredients
50ml Prototype Gin
25ml fresh lemon juice
25ml lavender honey syrup
Ice cubes
Lemon slice and lavender sprig for garnish
Honey Syrup (feel free to purchase online instead!)
In a small saucepan over medium heat, combine honey and water, stirring until the honey is fully dissolved.
Add the dried lavender flowers to the saucepan.
Allow the mixture to simmer for about 2 minutes, gently pushing the lavender leaves as you stir to release their aroma.
Remove from heat and let it cool to room temperature.
Once cooled, strain out the lavender flowers (sorry this isn't easy) and transfer the syrup to an airtight container.
Lavender Bee's Knees Cocktail
Fill a cocktail shaker with ice cubes.
Add the gin, fresh lemon juice, and 0.75 oz of the lavender honey syrup to the shaker.
Secure the lid and shake vigorously for about 20 seconds until the outside of the shaker feels cold.
Strain the mixture into a chilled coupe glass.
Garnish with a lemon slice and a sprig of lavender.
